How to Make Cambodian S’ngao Chruok Moan - Herb-Scented Chicken Soup Asian Cooking Recipe Cuisine

Cambodia S’ngao Chruok Moan (Herb-Scented Chicken Soup)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2-4 Servings


6 cups water

1 tbsp uncooked white rice

2 1/2 bs bone-in chicken thighs

2 culantro leaves

1 clove garlic, smashed but not chopped

1/8-inch thick galangal, peeled and smashed

1 stalk lemongrass, trimmed, bruised and cut into fourths or diagonal

8 oz button mushrooms, quartered

2 tbsp fish sauce

1 tsp salt

2 kaffir lime leaves

1/4 cup chopped cilantro

1/2 cup chopped culantro

1/4 cup chopped Thai basil leaves

2 limes, wedged


Directions:



In a large saucepan, bring water and rice to a boil over high heat. Add chicken, culantro, garlic, galangal and lemongrass and return to a boil. Cover and simmer over medium heat for 15 minutes.

Remove chicken and take meat from the bones. Cut or shred meat into bite-size pieces and return to saucepan. Add mushrooms, fish sauce and salt. Crush kaffir and toss into the soup. Simmer until mushrooms are cooked.

Take out big herbs, garlic, galangal and lemongrass and discard.
 

*Cilantro, culantro, green onions, basil and limes are for garnish. Add as much or as little as wanted. Serve hot!
