How to Make Indian Matar Dal - Yellow Split Pea Curry Asian Cooking Recipe Cuisine

India Matar Dal (Yellow Split Pea Curry)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings


4 cups water, or more if needed

8 oz. yellow split peas, rinsed and drained

1 red Thai chili, smashed

1 clove garlic, sliced paper thin

1 tsp cumin seeds

1 tsp salt


Directions:


Bring water and split peas to a boil over high heat. Make sure it doesn’t boil. Reduce heat and simmer until the peas are tender and resemble a coarse puree for about 1 hour. Add water as needed to prevent the mixture from drying out. 

Throw in the Thai chili and continue to simmer while you cook the garlic and cumin. 

Heat some oil over medium heat. Add garlic and cook until golden brown and fragrant. Stir in the cumin seeds. As soon as you smell the cumin seeds, pull from the heat. Don’t overcook the seeds or they turn bitter. 

Pour the garlic-cumin mixture into the pot with the peas. Stir in the salt and serve the curry immediately.


*If the final consistency is too thin or too thick, reduce heat to make it thicker or add water to make it thinner.
