This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. Recipe makes for 2 Servings
6-8 in. lotus root
1 tbsp white rice vinegar
2 tbsp sugar
Salt to taste
Directions:
Peel the lotus root and cut crosswise into ¼-in thick slices. Drop the lotus root slice into a pan of boiling water and blanch for 5 seconds. Drain and rinse in cold water.
Toss the lotus root slice in a bowl with the vinegar and sugar. Sprinkle salt to taste and serve immediately.
