How to Make Indian Palida - Spiced Red Lentil Stew Asian Cooking Recipe Cuisine

India Palida (Spiced Red Lentil Stew)

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

4 cups water

8 oz red lentils, soaked for at least 4 hours

2 medium onions, finely chopped

1/2 inch piece ginger, grated

2 tsp ground coriander

1 tsp ground cumin

1 tsp ground paprika

1/4 tsp ground turmeric

1 tbsp butter

Garam Masala: 3 green cardamom pods, two 1/2 inch sticks cinnamon, 4 cloves, 2 bay leaves

1 tsp sugar

salt

Directions:


Combine with water, lentils, onions, ginger, coriander, cumin, paprika and turmeric in a medium pot and bring to a boil over high heat. Reduce heat to medium. Cover and simmer for 15-20 minutes or until the lentils split and are a little mushy but not cooked through.

Melt butter over low heat in a small skillet and add garam masala until cardamom has plumped up and the spices have released their fragrance. Turn off the heat and stir in the sugar, 1 tsp salt and 1/4 cup of cooked lentils. 

Simmer the stew over low heat until lentils are tender and cooked through, another 10 - 15 minutes. Lentils should have the texture of a thick, pouring custard sauce. Fish out whole spices and add salt as needed.
