Vietnam Water Spinach and Beef Sour Broth
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4-6 Servings
2 tbsp fish sauce
1 tsp sugar
6 oz beef fillet, finely sliced along the grain to 1-inch strips
5 cups beef or chicken stock
6 oz water spinach, trimmed, rinsed, leaves and stalks separated
Juice of 1 lemon
Ground black pepper
1 red or green chili, seeded and finely sliced
Directions:
In a bowl, stir fish sauce with sugar until it has dissolved. Toss in the beef strips and leave to marinate for 30 minutes. Pour stock in a pan bring to a boil. Reduce the heat and add the water spinach. Stir in lemon juice and season with pepper
Place meat strips in bowls and ladle hot broth over the top. Garnish with chilies and serve.
