India Barbecued Ribs with Spice Rub
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Recipe makes for 4 Servings
4 lbs beef short ribs, cut into segments of 3 to 4 ribs each
Coarse sea salt or kosher salt to season ribs
3 tbsp finely chopped garlic
1 tbsp garam masala
1 tsp black peppercorns, crushed
2 tsp chili flakes
2 tbsp extra virgin olive oil
1 ½ tsp lime juice
2 tbsp finely chopped fresh cilantro
Pinch of salt
Directions:
Combine garlic, garam masala, black pepper corns and chili flakes. Rub the ribs with the coarse salt and the spice rub. Set aside for 30 minutes.
In a small bowl, combine olive oil, lime juice, cilantro and a little salt. Set aside.
Prepare the grill for a low temperature. Just before grilling, oil the hot grate. Place the meat on the grate above the drip pan not directly above the heat. Turn over once in a while and baste with the sauce. Test for doneness by poking the meat or using a meat thermometer.
