India Cucumber and Tomato Relish
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
2 medium onions, finely chopped
1 large lemon
1/4 tsp salt
4 medium tomatoes, seeded and chopped
Seeds of the 4 medium tomatoes
2 tsp sugar
1 medium cucumber, peeled and chopped
mint leaves for garnish
Directions:
Place the onions in a large bowl. Squeeze the juice from the lemon over them. Sprinkle with the salt and mix well.
In a separate bowl, mix the tomato seeds with the sugar. Tumble the tomatoes and cucumber into the bowl with the onions and toss well to combine. Right before serving, add the tomato seeds and toss again. Garnish with a handful of mint leaves.
