How to Make Chinese Tangy Tomato Shrimp Asian Cooking Recipe Cuisine

China Tangy Tomato Shrimp


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 6-8 Servings


3 tbsp vegetable oil, divided

1 large yellow onion, sliced into 8 wedges

4 medium ripe tomatoes, each cut into 8 wedges

3 cloves garlic, minced

2 – 2 ½ lbs unpeeled medium shrimp, deveined

1 ½ tsp salt

¼ cup ketchup

2 tbsp sugar

½ cup rice vinegar


Directions:


Preheat large skillet over high heat for 1 minute. Swirl in 1 tbsp of oil. Add onion and tomatoes and stir and cook until the tomato skins start to slip off and the flesh softens. 

Add garlic and cook and stir until the tomatoes are slightly mushy and the juices are released. Transfer tomato mixture to a plate and set aside.

In same wok, add remaining oil and heat over high. Toss in shrimp and sprinkle with salt. Stir and cook for about 2 minutes. 

Return tomato mixture to wok, add ketchup and sugar and stir everything swiftly around the wok. Splash in the vinegar and stir to mix. Simmer over medium heat until all the shrimp have turned pink and opaque.

*Remember, shrimp cooks fast and is rubbery when overcooked so watch it carefully.
