Japan Japanese Beef Short Ribs with Teriyaki Glazing Sauce
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
2 racks beef ribs, about 3lbs. each.
1 ½ cups Japanese soy sauce
3 tbsp sugar
4 tbsp mirin
3 tbsp sake
1 scallion, finely chopped
2 tsp ground ginger
2 tsp chopped garlic
Directions:
Combine soy sauce and sugar in a sauce pan and place over medium heat. When sugar is dissolved, remove pan from heat. Add mirin and sake and let cool. Then add the scallion, ginger and garlic.
Marinate the ribs in the sauce for about 1 hour. Remove the ribs from the sauce and place remaining sauce in a sauce pan over high heat. Boil for a few minutes until slightly thickened. Set aside.
Prepare grill at a low temperature. Just before you begin grill, oil the hot grate. Place the ribs over the lowest heat on the grill or the low zone for indirect grilling. Baste the meat every so often and test for your desired doneness.
