Thailand Hot and Sour Shrimp Soup


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 lb shrimp, peeled, heads and shells reserved

8 cups water

1 medium white onion, chopped

2 stalks lemongrass, bottom 3 inches only, cut into 1-inch lengths

4 fresh or 8 dried kaffir lime leaves

1 tbsp fish sauce

3 tbsp lime juice

1 long red chili, thinly sliced

1 small red onion, thinly sliced

1 large carrot, peeled and sliced into rounds or flowers

8 large sprigs fresh cilantro, for garnish


Directions:


Combine shrimp heads and shells, water, white onion, half the lemongrass and half the kaffir lime leaves. Bring mixture to a boil over high heat then reduce heat to medium and simmer for 25 minutes. Strain mixture through a fine sieve and discard solids

Pour stock into a large saucepan and add remaining lemongrass and kaffir lime leaves, fish sauce, lime juice, chili, red onion and carrot. Simmer over medium heat until carrots are tender, about 10 minutes. Add shrimp and simmer until cooked through, 3-4 minutes.

Adjust seasoning by adding more fish sauce if soup is not salty enough or more lime juice if it is not tangy enough.


Remove kaffir lime leaves and ladle soup into individual bowls. Serve immediately, topped with cilantro sprigs.
