Thailand Beef Soup with Coconut Milk
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
2 cloves garlic
2 tbsp peeled and finely chopped fresh ginger
3 shallots, peeled
1 tsp galangal powder
1/2 tsp sea salt
1/2 tsp white peppercorns
4 fresh cilantro roots
1 small red chili
3 tbsp light olive oil
12 oz round or rump steak, cut into 1-inch cubes
5 cups coconut milk
3 cups beef stock
2-3 tbsp lemon juice
2 stalks lemongrass, bottom 4 inches only, cut into 2-inch pieces
3 fresh or 6 dried kaffir lime leaves
2 tsp palm or dark brown sugar
1 tbsp fish sauce
6 1/2 oz baby English spinach leaves
Directions:
In a food processor, combine garlic, ginger, shallots, galangal, salt, peppercorns, cilantro, chili and 2 tbsp oil Process to smooth paste, 1-2 minutes.
Heat remaining oil in a large saucepan over medium heat. Add paste and cook, stirring until fragrant for 3-4 minutes.
Add meat and cook for 3-4 minutes, turning to coat meat and brown it slightly. Add coconut milk, stock and lemon juice and bring mixture to a steady shimmer.
Add lemongrass, kaffir lime leaves, palm sugar and fish sauce and simmer until meat is tender, about 30 minutes. Remove lemongrass and lime leaves. Season to taste with fish sauce if soup is not salty enough and lemon juice if it is not tangy enough.
