How to Make Cambodian Sour Carp Asian Cooking Recipe Cuisine

Cambodia Sour Carp


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 1/4 lb carp fillets, cut into 3 or 4 pieces

2 tbsp sesame or vegetable oil

2 tsp ground turmeric

1 small bunch coriander and basil, stalks removed

20 lettuce leaves or rice wrappers

nuoc mam or other dipping sauce to serve

MARINADE:

2 tbsp tamarind paste

1 tbsp soy sauce

juice of 1 lime

1 green or red Thai chili, finely chopped

1 in galangal root, peeled and grated


a few sprigs on fresh cilantro leaves, finely chopped



Directions:


Mix the marinade ingredients together in a bowl. Toss the fish pieces in the marinade, cover with plastic wrap and chill in the refrigerator for at least 6 hours or overnight.

Lift the pieces of fish out of the marinade and lay them on a plate. Heat a wok or heavy pan, add the oil and stir in the turmeric. Working quickly, so that the turmeric doesn’t burn, add the fish pieces, gently moving them around the wok for 2-3 minutes. Add any remaining marinade to the pan and cook for a further 2-3 minutes or until the pieces of fish are cooked through.


To serve, put in a plate with the lettuce leaves, rice wrappers and dipping sauce.
