How to Make Indian Curry Yogurt Soup Asian Cooking Recipe Cuisine

India Curry Yogurt Soup 



This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2 Servings



2 tbsp vegetable oil

1 green Thai or Anaheim chili, seeded and chopped

4 cloves garlic, finely chopped

1 tbsp peeled and grated fish ginger

4 dried red chilies

1 tsp cumin seeds

1/2 tsp chili powder

1/2 tsp ground turmeric

8 fresh curry leaves

2 cups plain yogurt

sea salt to taste

1/2 cup coconut milk

1/2 fresh red Thai or Anaheim chili, seeded adn cut into very fine 2-inch lengths


Directions:


In a medium saucepan, heat 1 tablespoon oil over medium heat and fry chili, garlic, ginger, dried chilies, cumin seeds, chili powder, turmeric and 4 of the curry leaves until fragrant, 2-3 minutes.

Reduce heat to low and stir in yogurt and salt. Cook for 5 minutes, stirring without bringing it to a boil. Stir in coconut milk and cook for 1 minute, stirring constantly. Remove and discard dried chilies. Spoon into serving bowls.


In a small skillet, heat remaining 1 tablespoon oil and fry remaining 4 curry leaves and shredded fresh red chili until the chili curls, about 30 seconds. Using a slotted spoon, transfer to paper towels to drain. Garnish each soup bowl with curry and chili leaf mixture.
