How to Make Chinese Duck Soup Asian Cooking Recipe Cuisine
China Duck Soup
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
2 green onions, finely chopped
1 tbsp cooking oil
1-inch fresh ginger, peeled and finely chopped
4 oz cooked duck meat, chopped
4 oz winter melon, thinly sliced
6 cups chicken stock
salt to taste
1 tbsp Shao Hsing wine or dry sherry
1 tsp cornstarch dissolved in 1 tbsp stock
freshly ground black pepper to taste
Directions:
Fry green onion in the oil for 1 minute.
Add ginger and duck meat. Stir-fry for 1 minute.
Add winter-melon and stir fry for 1-2 minutes more then add stock and remaining ingredients
Gently simmer for 2-3 minutes until soup becomes clear.
