How to Make Middle Eastern Fattoush - Toasted Bread Salad Asian Cooking Recipe Cuisine
Middle East Fattoush (Toasted Bread Salad)
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 2-4 Servings
1 large pita bread
8 big romaine lettuce leaves
1 young green cucumber
2 medium tomatoes
1 cup green bell pepper
5 scallions, chopped including tender green tops
6 tbsp. flat leaf Italian parsley, chopped
Dressing:
1 clove garlic
1 tsp salt
½ cup lemon juice
½ cup olive oil
fresh ground black pepper
Directions:
1. Toast pita bread until golden brown.
2. Break into bite size pieces
3. Shred or break lettuce into small pieces.
4. Cut the cucumber into quarters lengthwise and cut into chunks.
5. Cube the tomatoes.
6. In a small bowl crush the garlic with the salt and make into a paste. Add lemon juice, olive oil and pepper. Beat thoroughly.
7. Combine bread, lettuce, cucumber, tomatoes, peppers, scallions, parsley and mint. Put some dressing and toss.
