How to Make Chinese Snow Peas with Shrimp Asian Cooking Recipe Cuisine

China Snow Peas with Shrimp

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.

Recipe makes for 2-4 Servings

2 tbsp oil

2 oz split blanched almonds, halved

4 oz snow peas

2 tsp light soy sauce

1 cup chicken stock

2 tbsp dry sherry

salt and pepper

2 oz bamboo shoots, sliced

1 lb cooked and peeled shrimp

Directions:

1. Heat oil in wok. Add the almond and cook over moderate heat until golden brown. Remove from the oil and drain on paper towels.

2. To prepare the snow peas, tear off the stems and pull them downwards to remove any strings. If the snow peas are small just remove the stalks. Add to hot oil and cook for about 1 minute. Remove and set aside with the almonds.

3. Drain all oil from the wok and mix together cornstarch and remaining ingredients (excepting the shrimp and bamboo shots). Pour the mixture into the wok and stir constantly while bringing to a boil. Allow to simmer for 1-2 minutes until thickened and cleared.

4. Stir in shrimp and all other ingredients and heat for 1 minute. Serve!
