China Fillet Steak Chinese Style


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings


8 oz fillet or rump steak, cut into 1-inch pieces

pinch of baking soda

1 tbsp light soy sauce

1 tsp sesame oil

1 tsp Chinese wine or 2 tsp dry sherry

2 tsp sugar

1 tsp cornstarch

salt and pepper

2 tbsp dark soy sauce

4 tbsp water

2 tbsp peanut oil

2 cloves garlic, crushed

2 green onions, sliced diagonally into 1/2 inch pieces

1/2 tsp crushed ginger

1 can straw mushrooms, drained

1 can baby corn, drained

1 tbsp oyster sauce


Directions:


1. Put steak in a bowl and sprinkle baking soda.

2. Mix together light soy sauce, sesame oil, win, half the sugar, half cornstarch, and seasoning. Pour over the steak and leave for at least one hour, turning occasionally.

3. Meanwhile, make sauce by mixing 2 tbsp dark soy sauce, remaining sugar and cornstarch and water. Mix and set aside.

4. Heat wok, add peanut oil and when hot, fry steak for 4 minutes. Remove from wok and set aside.

5. Add garlic, green onions, ginger, mushrooms, baby corn, and finally steak.

6. Add oyster sauce and mix well. Add sauce mixture and bring to a boil. Cook for 3 minutes, stirring occasionally.
