How to Make Chinese Sweet-Sour Fish Asian Cooking Recipe Cuisine

China Sweet-Sour Fish


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2 Servings


1 sea bass or carp, weighing about 2 lbs

1 tbsp dry sherry

3-4 slices ginger

1/2 cup sugar

7 tbsp cider vinegar

1 tbsp soy sauce

2 tbsp cornstarch

1 clove, garlic, crushed

2 green onions, shredded

1 small carrot, peeled and finely shredded

1/2 cup bamboo shoots, shredded


Directions:


1. Rinse the fish well inside and out. Make three diagonal cuts on each side of the fish with a sharp knife. Trim off the fins, leaving the dorsal fin on top. Trim the tail to two neat points.

2. Bring enough water to cover the fish to boil in a wok. Gently lower the fish into the boiling water and add the sherry and ginger. Cover the wok tightly and remove at once from the heat. Allow to stand for 15-20 minutes to let the fish cook in the residual heat.

3. Take all but 4 tbsp of the fish cooking liquid from the wok. Add remaining ingredients including the vegetables and cook, stirring constantly, until the sauce thickens. Spoon some of the sauce over the fish and serve rest.

*You can serve this sauce with fried fish as well!
