China Steamed Cabbage Rolls with Fish and Crabmeat
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
8 large Chinese cabbage leaves
2 slices ginger
1/2 lb white fish fillets
1 1/2 tsp salt
1 egg white
1 tsp sesame oil
1/2 lb crabmeat
Directions:
1. Pour boiling water over the cabbage to soften. Drain and dry well.
2. Chop the fish coarsely. Finely chop the ginger. Place the two in a bowl with the salt, egg white, sesame oil and crabmeat. Mix well.
3. Place 2 cabbage leaves on a flat surface. Put fish mixture into the center of each of the leaves. Roll the leaves to form a tight roll.
4. Repeat until all the fish mixture has been used.
5. Steam the fish rolls vigorously for 10-12 minutes. Place on a platter and serve with soy sauce!
