Malaysia Ayam Panggang (Malay Style Spice Fried Chicken)
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 3-4 Servings
10 pieces chicken wings cut into little drumstick & wing
Pinch salt & pepper
2 tbsp. coconut powder
¼ cup curry
½ cup fried onions
1 tbsp. chili (flakes or freshly chopped)
2 tbsp. butter
Pinch five-spice powder
Oil for frying
Directions:
1. Marinate chicken overnight with five-spice powder, salt, pepper and coconut cream.
2. Coat with curry by dipping each piece first in egg white as like as breaded chicken.
3. Deep fry in oil.
4. Heat butter; add onions and chili flakes. Toss with freshly fried chicken wings.
*You can definitely use other chicken parts but remember breasts tend to dry out very fast!
