Cambodia Hot Basil Chicken (Cha Kdao Sach Maon)
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 2 Servings
500g chicken thighs, chopped
1 bunch basil leaves
4 hot chili peppers
1/4 cup peanuts
1 tbsp chopped garlic
1 tbsp fish sauce
1tsp oyster sauce
1 tsp soy sauce
1/4 tsp sugar
150ml water
Directions:
1. Heat cooking in a large pan or wok. Add garlic and chiles. Saute for 30 seconds.
2. Add chicken, fish sauce and water and cook for about 10 minutes. When chicken is nearly cooked, add the peanuts, oyster sauce and soy sauce. Add basil towards the end and allow to slightly wilt
Best served hot!
