How to Make Iranian Pomegranate Stew with Chicken (Khoresh Fesenjan) Asian Cooking Recipe Cuisine

Iran Pomegranate Stew with Chicken (Khoresh Fesenjan)

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.

Recipe makes for 6 Servings

2 tablespoons olive oil

1 1/2 pounds chicken legs, cut up

 1 white onion, thinly sliced

1/2 pound walnuts, toasted and finely ground in a food processor

 1 teaspoon salt

 4 cups pomegranate juice

 1/2 teaspoon cardamom (optional)

 2 tablespoons sugar (optional)

Directions:

1. Heat olive oil in a large skillet over medium heat. Place chicken and onions in skillet, and cook 20 minutes, stirring occasionally.

2. Mix in pureed walnuts, salt, pomegranate juice, and cardamom. Bring to a boil. Reduce heat to low, cover, and simmer for 1 1/2 hours, stirring occasionally. (If the sauce becomes too thick, stir in 1/4 cup warm water.) Mix in sugar, adjust seasoning, and simmer 30 minutes more.
