Vietnam Sunny Side Up Quail Egg Sandwich Trứng Chim Cút Ốp La
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 1 Serving
4 quail eggs
2 tablespoons vegetable oil
1 green onion, finely chopped
1⁄2 teaspoon sugar
1 clove garlic, finely minced
1 red Thai chile pepper, thinly sliced (optional)
1⁄4 teaspoon white pepper, freshly ground
2 teaspoons Fish Sauce
1 individual baguette
1⁄4 cup sliced cucumber
2 tablespoons củ kiệu, thinly sliced
Directions:
Crack the eggs into a small bowl, making sure not to break the yolks.
Heat the oil in a small saucepan. Once the oil is hot, add the green onion and sprinkle sugar.
Cook for 10 seconds, stirring constantly. Add the garlic and stir-fry for 20 seconds until fragrant and golden.
Immediately pour in the eggs and sprinkle with the red Thai chile slices (if using).
Cover and let sit for 1 minute. Reduce the heat to the lowest setting.
The egg yolks should still be slightly runny at this point. Top with a sprinkle of white pepper. Cover and let sit for 2 minutes until the white part of the eggs is just set and it becomes opaque.
Drizzle with Fish Sauce.
Slide the eggs onto a plate and serve them sizzling with the baguette, cucumber, and củ kiệu on a separate plate. Dip the bread into the yolk to absorb the egg flavors, and pick up the eggs with more bread.
