China Spicy Cold Celery
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe Makes for 4 Servings:
1 pound celery stalks
1 teaspoon salt
1 tablespoon plus 1 teaspoon sugar
3 tablespoons dark sesame oil
1 tablespoon soy sauce
2 teaspoons vinegar, preferably rice or cider
1 garlic clove, minced
1 teaspoon chili oil, optional
Directions:
Cut the celery into 2-inch lengths. Mix with the salt and 1 teaspoon of the sugar and set aside for 10 minutes while you whisk together the remaining ingredients.
Rinse, drain, and pat dry the celery, then toss with the dressing. Let stand in the refrigerator for at least 3 hours and up to a day. Serve chilled.
