Recipe makes for 2 Servings
2 pieces of salmon fillet (skin on), about 150g each
200g fresh or dried egg noodles
1 tbsp groundnut oil
1 tsp toasted sesame oil
2 baby pak choi, chopped
1 tbsp sesame seeds, to taste
1 tbsp sesame seeds, toasted
2 spring onions (green and white parts), finely chopped
lime wedges, to serve
For the teriyaki sauce:
4 tbsp dark soy sauce
2 tbsp mirin
2 tbsp sake
1 tbsp palm sugar or soft dark brown sugar
2cm knob of fresh root ginger, peeled and grated
Directions:
Preheat the oven to 220°C/Gas Mark 7. First make the teriyaki sauce. Combine all the ingredients in a small saucepan and cook on a medium heat for 5 minutes until thickened. Leave to cool slightly.
Brush the sauce all over the salmon and place it, skin side up, in a foil-lined baking tin. Leave to marinate for 5 minutes, then bake for 10 minutes.
Meanwhile, cook the noodles according to the packet instructions; drain. Heat the groundnut and sesame oils together in a wok or large frying pan on a medium heat, add the pak choi and sesame seeds, and stir-fry for a couple of minutes.
Add the noodles and the spring onions, and stir and toss to mix thoroughly.
Divide the noodles between 2 pasta dishes and top each with a salmon fillet. Serve with lime wedges, and spoons and forks.
