Vietnam Noodles with Crab and Cloud Ear Mushrooms
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
1 oz wood ear or cloud ear mushrooms (soak if dried in warm water for 20 minutes)
4 oz dried cellophane noodles, soaked in warm water for 20 minutes
2 tbsp vegetable oil
3 shallots, halved and thinly sliced
2 garlic cloves, crushed
2 green Thai chilies, seeded and sliced
1 carrot, peeled and cut into thin diagonal rounds
1 tsp sugar
3 tbsp oyster sauce
1 tbsp soy sauce
2 cups water or chicken stock
8 oz fresh, raw crab meat, cut into bitesize chunks

cilantro leaves for garnish
Directions:
Cut the mushrooms in half, remove the hard center part. Drain noodles and cut into 12 in pieces and put aside.
Heat a wok or pan and add 1 tbsp of oil. Stir in shallots, garlic and chilies and cook until fragrant.
Add carrots and cook for 1 minute then add mushrooms. Stir in sugar, soy sauce and oyster. Add the noodles and pour in water or stock.
Cover the pan and cook for about 5 minutes or until noodles are soft or have absorbed most of the liquid.
Meanwhile heat remaining oil in separate pan. Cook crab meat until pink and tender. Season with pepper. Arrange noodles and meat on a plate and garnish with cilantro.
