How to Make Singaporean Pork Rib Soup Asian Cooking Recipe Cuisine
Singapore Pork Rib Soup (Bak kut teh)
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe Makes for 3-4 Servings:
600 g (11/3 lbs) pork ribs, cut into pieces
150 g (5 oz) lean pork
1 sachet bak kut teh spices*
10 cups (2.5 litres) water or pork stock
3 tablespoons soy sauce
1 teaspoon salt
1 teaspoon sugar
Chopped fresh coriander leaves (cilantro), to garnish
Yew char kway (Chinese crullers), to serve
Directions:
Combine the pork ribs, lean pork, bak kut teh spices sachet and water in a large pot. Bring to a boil over medium heat, reduce the heat to low and simmer, covered, for 30 minutes.
Add the soy sauce, salt and sugar. Simmer for another 45 minutes, or until the pork is fork tender.
Remove the lean pork and shred into small pieces. Strain the stock into individual serving bowls and divide the lean pork and pork ribs between them. Garnish with chopped fresh coriander leaves and serve with the yew char kway on the side.
*Bak kut teh spice mixes are available in many Chinese grocery stores or supermarkets. You can make your own spice bag with 1 cinnamon stick, 4–5 cloves, 1 pod star anise, 1 teaspoon black peppercorns and 1 tablespoon Chinese wolfberries (kei chee). Tie these in a piece of muslin cloth.
