Middle East Badhinjan Buran Stir-Fry
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 2-3 Servings
8 oz. eggplant, small diced
1 cup carrots, sliced
1 cup celery, sliced
1 red bell pepper, chopped
1 tbsp garlic, minced
salt & pepper to taste
1/3 cup goat cheese
Directions:
Heat a little oil in a wok or frying pan over medium-high heat.
Add eggplant, carrot, celery, and bell pepper. Stir around for 2 minutes.
Add garlic, and season with a little salt and pepper to taste. Stir around for 2 minutes.
Serve with a tomato and cucumber salad and crumbled goat cheese. Garnish with mint leaves.
