How to Make Indian Green Mango Pickle Asian Cooking Recipe Cuisine

India Green Mango Pickle


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2 1/4 Cups

1 large green mango (about 14 ounces)

¼ cup mustard oil or vegetable oil

1 tbsp cumin seeds

1 tbsp chile powder

2 tsp fenugreek seeds

3 cloves garlic, sliced thinly

2 tsp kosher salt

2 tsp asafetida

1 tsp ground turmeric

2 tbsplight brown sugar

¼ cup distilled white vinegar


Directions:


Wash, dry, and cut the mango into ½-inch cubes; do not peel it. You should have about 3 cups of fruit.

Combine the mustard oil, cumin, chile, fenugreek, and garlic in a medium skillet and cook over medium heat, stirring often, until the spices become fragrant and the garlic browns, about 4 minutes. 

Add the mango, stir to combine, and cook for an additional 3 minutes, until slightly soft.

Turn off the heat, and then add the salt, asafetida, turmeric, sugar, and vinegar. Combine thoroughly. 

Pack the pickle into glass or ceramic jars or containers with tight lids (avoid plastic, as it will retain this pickle’s color and strong perfume).
This pickle can be eaten immediately, but it is better if you allow it to sit at room temperature for 24 hours. 


Refrigerated, this pickle will last for at least 4 months.
