Vietnam Stir-Fried Chicken with Chilies and Lemon Grass


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp sugar

2 tbsp sesame oil

2 garlic cloves, finely chopped

2-3 green or red Thai chilies, seeded and finely chopped

2 lemon grass stalks, finely sliced

1 onion, finely sliced

12 oz skinless chicken breast fillets, cut into bite size strips

2 tbsp soy sauce

1 tbsp fish sauce

1 bunch fresh coriander, stalks removed, leaves chopped

salt and ground black pepper

Directions:


To make a caramel sauce, put the sugar into a pan with 1 tsp water. Heat gently until the sugar has dissolved and turned golden. Set aside.

Heat a large wok or heavy pan and add the sesame oil. Stir in the chopped garlic, chilies and lemon grass and stir-fry until they become fragrant and golden. Add the onion and stir-fry for 1 minute then add the chicken strips.


When the chicken is cooked through, add the soy sauce, fish sauce and caramel sauce. Stir to mix and heat through, then season with a little sauce and pepper. Toss the coriander into the chicken and serve hot.
