Cambodia Stir-Fried Beef with Sesame Sauce
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
1 lb beef sirloin cut into thin strips
1 tbsp peanut oil or sesame oil
2 garlic cloves, finely chopped
2 red Thai chilies, seeded and finely chopped
1/2 tsp sugar
2 tbsp sesame paste
2-3 tbsp beef stock or water
salt and ground black pepper
red chili strips
1 lemon, cut into quarters
MARINADE:
1 tbsp peanut oil
2 tbsp fish sauce
2 tbsp soy sauce
Directions:
In a bowl, mix together the ingredients for the marinade. Toss in the beef, making sure it is well coated. Leave to marinade for 30 minutes.
Heat the oil in a wok or heavy pan. Stir in the garlic and chilies and cook until golden and fragrant. Stir in the sugar. Add the beef, tossing it around the wok to sear it.
Stir in the sesame paste and enough stock or water to thin it down. Cook for 1-2 minutes, making sure the beef is coated with the sauce. Season with salt and pepper, garnish with chili strips and serve with lemon wedges.
