How to Make Japanese Red Pickled Ginger - Beni Shoga Asian Cooking Recipe Cuisine

Japan Beni Shoga (Red Pickled Ginger)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 1 pound pickles

1 lb fresh ginger

1/4 cup sugar

2 tbsp kosher salt

1/2 to 3/4 cup red umezu

Directions:


Peel the ginger and chop it into strips or chunks. In a bowl, mix ginger, sugar and salt making sure to mix thoroughly to combine. Allow the ginger to sit for at least 4 hours (overnight is fine)

Preheat the oven to 200F. 

Drain the liquid from the ginger and squeeze very firmly to get as much liquid as possible. Transfer the ginger to a baking sheet lined with parchment paper making sure it's in a single layer. Place in the oven; prop the door open slightly with a wooden spoon. Allow the ginger to dry for 2-3 hours, stirring every hour until it's dry to the touch.


Pack ginger in a jar where it will be completely covered with red umezu. Cover and let sit on the countertop for about 3 hours, then top off with more umezu as necessary to keep liquid level above the ginger. Let sit in room temperature for 1 day then move to the refrigerator. It will be ready in a week and will last for 1 year.
