How to Make Indian Vindaloo Pork Steaks Asian Cooking Recipe Cuisine
India Vindaloo Pork Steaks
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Recipe makes for 4 Servings
2 lbs boneless pork chops
1 tbsp oil
1 cup water
salt to taste
MARINADE:
4 cloves, toasted
one 1-inch piece cinnamon, toasted
1 tsp cumin seeds, toasted
1 1/2 tsp chili flakes
2 tsp black peppercorns, crushed
1 tbsp chopped garlic
1 tbsp peeled and finely chopped fresh ginger
1 large onion, finely chopped
6 tbsp malt vinegar
Directions:
Make the marinade by placing the toasted spices in a mortar and grinding to powder. One by one, add the chili flakes, peppercorns, garlic, ginger and onion and grind them to a fine paste.
Add the vinegar and stir to combine. Rub this marinade all over the pork chops and leave in the refrigerator for 3-4 hours. Remove the pork from the marinade and wipe off the marinade.TH
In a small saucepan, add the oil and place over medium-high heat. When hot, add the leftover marinade and sauté for a few minutes. Add the water and simmer over low heat for 10 minutes. Add the salt. Set aside to be used as a basting sauce and for serving as a dipping sauce.
Prepare the grill with medium and high heat.
Just before you begin grilling, oil the hot grate. Place the meat on the grate over the high heat and grill for about 2-3 minutes on each side. Move the meat to the medium heat zone and continue grilling for 5-7 minutes and baste regularly with the cooked marinade.
Check for doneness by pricking and it's done when the juice runs clear.
