Vietnam Beef Stew with Star Anise and Basil


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

1 1/4 lb lean beef, cut into bite size pieces

1 tbsp ground turmeric

2 tbsp sesame or vegetable oil

3 shallots, chopped

3 garlic cloves, chopped

2 red chilies, seeded and chopped

2 lemon grass stalks, cut into several pieces and bruised

1 tbsp curry powder

4 star anise, roasted and ground to a powder

1.25 pints hot beef or chicken stock, or boiling water

3 tbsp fish sauce or nuoc mam

2 tbsp soy sauce

1 tbsp raw cane sugar

1 bunch fresh basil, stalks removed

salt and ground black pepper

1 onion halved and finely sliced

chopped fresh cilantro leaves

rice or baguettes to serve


Directions:


Toss the beef in the ground turmeric and set aside. Heat a wok or heavy pan and add the oil. Stir in the shallots, garlic, chilies and lemon grass and cook until they become fragrant.

Add the curry powder, all but 2 tsp of the roasted star anise, add the beef. Brown the beef, then pour in the stock or water, fish sauce, soy sauce and sugar. Stir and bring to a boil. Reduce the heat and cook gently for about 40 minutes or until the meat is tender and liquid has reduced.

Season to taste with salt and pepper, stir in the reserved star anise, and add the basil. Transfer the stew to a serving dish and garnish with the sliced onion and cilantro leaves. 


Serve with rice or baguette.
