China Mongolian Lamb Kebabs
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4 Servings
2 lbs lean boneless lamb, cut into 1-in cubes
2 large onions, quartered
2 large green bell peppers, deseeded and cut into squares
12 skewers
salt
MARINADE:
1/2 tsp black pepper
1 tbsp Chinese light soy sauce
1 tsp cumin seeds, toasted and crushed
1-2 tsp chili flakes
1 tbsp finely chopped green onion
1.5 tsp peeled and chopped fresh ginger
Directions:
In a large bowl, combine the ingredients for the marinade. Add the lamb cubes, toss to coat, cover and let marinate in the refrigerator for 2 hours.
Remove the meat from the marinade. In a saucepan, bring the leftover marinade to a simmer for a few minutes. Remove from the heat and set aside for basting.
Thread the meat cubes, onion quarters and green pepper squares onto the skewers, alternating them as you go. Sprinkle with some salt.
Prepare the girl with medium and high heat zones.
Just before you begging grilling oil the hot grate. Place the skewers on the grate over the high heat zone and grill each side for 2-3 minutes. Move the skewers to the medium heat zone and continue grilling about 3-5 minutes, turning regularly and basting regularly with the cooked marinade.
Test for doneness by poking the meat. Serve hot!
