How to Make Filipino Pork Binagoongan Asian Cooking Recipe Cuisine
Philippines Pork Binagoongan
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4-6 Servings
2 lbs. pork spareribs, cut into serving pieces
1 tbsp vegetable oil
2 cloves garlic, minced
1 medium-sized onion, chopped
1 medium-sized tomato, chopped
1 tbsp vinegar
2-3 tbsp salted shrimp fry (bagoong)
1 cup water
pinch of sugar
pepper to taste
Directions:
In a skillet over medium heat, sauté garlic in oil until lightly browned.
Add onion, tomato, vinegar, salted shrimp fry, sugar, pepper and pork pieces. Cover and simmer in medium low heat for about 1 hour or until meat is tender.
Add more water if you prefer more sauce. Correct salted shrimp fry seasoning to taste. Stir occasionally to blend flavor well. Serve with steamed rice
*The salted shrimp fry will give a strong fishy smell while being cooked. Burn a candle to neutralize the smell.
