How to Make Indian Chili Chicken Asian Cooking Recipe Cuisine

India Chili Chicken


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

3-inch cinnamon stick

2 tsp green cardamom pods

2 tsp whole cloves

1 tsp black peppercorns

1/3 cup chopped fresh cilantro

36 fresh curry leaves

juice of 2 lemon

4 tsp finely chopped fresh green chilies

4 tsp finely grated fresh ginger

4 tsp crushed garlic

2 tsp tamarind concentrate

1 tsp ground turmeric

salt to taste

2 lb chicken thigh fillets, quartered

2 tbsp vegetable oil

Directions:


Preheat oven to 475F. Grind cinnamon, cloves, peppercorns to a powder. Transfer spices to a food processor and add cilantro, curry leaves, lemon juice, chilies, ginger, garlic, tamarind, turmeric and salt. Process to form a paste.

Place chicken pieces in a glass or ceramic bowl and add spice mixture. Mix well to coat chicken and set aside to marinate for 10-15 minutes

Brush vegetable oil over a large baking sheet and spread coated chicken on sheet in a single layer. Bake, without turning, until chicken is coated through about 20 minutes. Serve immediately.
