Japan Soba Noodles with Garlic and Mushrooms


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 6 Servings

10 oz Japanese soba noodles

4 tsp vegetable oil

1/4 cup soy sauce

2 tbsp rice vinegar

2 tbsp sweet Asian chili sauce

1 tbsp sesame oil

4 oz sliced oyster mushrooms

1 1/2 tsp minced garlic, about 3 cloves

1 cup snow peas, sliced

4 green onions, thinly sliced

Directions:


Cook the soba noodles according to package instructions. Drain, then return to pot and toss with 1 tsp vegetable oil.

In a large measuring cup, combine the soy sauce, vinegar, chili sauce and sesame oil. 

In a large skillet, heat 1 tbsp vegetable oil. When oil is hot, add the mushroom and saute them for 4-5 minutes until they are tender and fragrant.

Add garlic and snow peas and saute them for about 1 minute. Add the soy sauce mixture and cook for about 30 seconds until it comes to a boil.


Pour the vegetables and sauce over the noodles, toss gently, and top with the green onions. Serve immediately or refrigerate for up to 2 days. Serve hot or cold.
