Japan Scallops with Soba Noodles and Dashi Broth
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
8 oz dried soba noodles
1/4 cup mirin
1/2 cup light soy sauce
2 tsp rice vinegar
1 tsp dashi granules
2 spring onions, sliced on the diagonal
1 tsp finely chopped fresh ginger
24 large scallops
5 fresh black fungus, chopped
1 sheet nori, shredded
Directions:
Add the noodles to a large saucepan of boiling water and stir to separate. Return to a boil, adding 1 cup cold water and repeat this step 3 times as it comes to a boil. Drain and rinse under cold water.
Place the mirin, soy sauce, vinegar, dash and 3 1/2 cups water in a non-stick wok. Bring to a boil then reduce the heat and simmer for 3-4 minutes. Add the spring onion and ginger and keep at a gentle simmer.
Heat a grilling pan or hot plate until very hot and sear the scallops in batches for 30 seconds each side. Remove from the pan.
Divide the noodles and black fungus among four deep serving bowls. Pour 3/4 cup broth into each bowl and top with 6 scallops each. Garnish with the shredded nori and serve immediately.
