Vietnam Lobster and Crab Steamed in Beer


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

4 uncooked lobsters, about 1 lb each

4 uncooked crabs, about 8 oz each

2 1/2 cups beer

4 spring onions, trimmed and chopped into long pieces

1.5-inch ginger, peeled and finely chopped

2 green or red Thai chilies, seeded and finely sliced

3 lemongrass stalks, finely sliced

1 bunch fresh dill, fronds chopped

1 bunch each fresh basil and cilantro, stalks removed and leaves chopped

about 2 tbsp fish sauce

juice of 1 lemon

salt and ground black pepper

Directions:


Clean the lobsters and crabs thoroughly and rub them with salt and pepper. Place them in a large steamer and pour the beer into the base.

Scatter half the spring onions, ginger, chilies, lemon grass and herbs over the lobsters and crabs and steam for about 10 minutes or until the lobster turn red. Lift them on to a warm serving dish.


Add the remaining flavouring ingredients to the beer with the fish sauce and lemon juice. Pour into a dipping bowl and serve with the seafood.
