Vietnam Jungle Fish Cooked in Banana Leaves


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

12 oz. freshwater fish fillets like trout, cut into bitesize chunks

6 banana leaves

vegetable oil

sticky rice or noodles

MARINADE:

2 shallots

2 in turmeric root, peeled and grated

2 spring onions, finely sliced

2 garlic cloves, crushed

1-2 green Thai chilies, seeded and finely chopped

1 tbsp fish sauce

1/2 tsp raw cane or brown sugar

salt and ground black pepper


Directions:


To make marinade, grate shallots into a bowl then combined with the other ingredients. Season with salt and pepper. Toss the chunks of fish in the marinade then cover and chill for 6 hours or overnight.

Prepare a barbecue. Place one of the banana leaves on a flat surface and brush with oil. Place the marinated fish on the banana leaf, spreading it out evenly then fold over the sides to form an envelope. Place this envelope, fold side down, on top of another lead and fold that one in the same manner. Repeat al leaves till used up.


Secure the last layer of banana leaf with a piece of bendy wire. Place banana leaf packet on the barbecue. Cook for about 20 minutes, turning it over from time to time to make sure it is cooked on both sides - the outer leaves will burn. Carefully untie the wire and unravel the packet. Check that the fish is cooked and serve with sticky rice, noodles or salad.
