India Three Lentil Spicy Broth
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4-6 Servings
1/2 cup black lentils, rinsed and drained
1/2 cup dried red kidney beans, rinsed and drained
1/4 cup split chickpeas, rinsed and drained
5 cups water
2.5-inch cinnamon stick
3 green cardamom pods, cracked
3 whole cloves
1 1/2 tbsp finely grated fresh ginger
1 1/2 tbsp chili powder
14 oz canned crushed peeled tomatoes
2/3 cup unsalted butter, chopped
salt to taste
4 tsp dried fenugreek leaves, crushed
Directions:
Place lentils, kidney beans, chickpeas and water in a large bowl. Cover and let stand overnight.
The next day, place lentil mixture and liquid in a large, heavy saucepan. Place cinnamon, cardamom and cloves in a square cheesecloth, bring up the corners to form a bundle, tie with kitchen twine and add to pan.
Reduce heat to low and cook, uncovered, until lentils, beans, chickpeas are tender for about 1-2 hours. Add extra water if necessary to keep lentil mixture covered.
Remove bundle of spices and discard. Add ginger, garlic, chili powder, tomatoes, butter and salt to pan. Raise heat to medium and cook, stirring often, for 10 minutes. The consistency should be like thick soup. Taste and adjust seasoning. Stir in fenugreek leaves.
