How to Make Malaysian Penang Laksa Asian Cooking Recipe Cuisine

Malaysia Penang Laksa


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings


2 tbsp peanut oil

1 medium yellow onion, sliced

2 tbsp laksa paste

8 cups fish stock

1/4 cup lemon or lime juice

7 oz. dried rice noodles

1 lb firm white-fleshed fish fillets, skinned and cut into 8 inch pieces

8 oz scallops or prawns

4 deep-fried tofu puffs, halved

5 oz. bean sprouts, trimmed

4 quail eggs, hardboiled, peeled and halved (can replace with 2 chicken eggs)

4 small sprigs fresh mint

4 small sprigs fresh basil

1/4 cup crispy fried onions


Directions:


In a large saucepan over medium heat, heat oil. Add onion and cook until it begins to soften, 3-4 minutes. 

Add laksa paste and continue to cook, stirring, until onion is soft and paste is fragrant, about 4 minutes. 

Add fish stock and lime juice, increase heat to medium-high and bring liquid to a steady simmer. Reduce heat to medium-low and simmer for 10 minutes.

Place noodles in a large bowl and add boiling water to cover. Allow to stand until noodles are soft. Drain, rinse noodles and set aside.

Add fish to laksa broth and simmer until cooked through. Add scallops (or prawns), tofu and cook for 1 minute.

Spoon noodles into individual bowls and ladle soup over top. Top with remaining ingredients, finishing with crispy fried onions.
