How to Make Indian Spicy Masala Drumsticks Asian Cooking Recipe Cuisine
India Spicy Masala Drumsticks
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
8 chicken drumsticks
1 tbsp lime juice
salt
2 tbsp oil
SPICE RUB:
4 tbsp desiccated coconut
1 tsp coriander seeds, toasted
1 tsp ground cumin, toasted
1 tsp black peppercorns, toasted
1/2 tsp ground turmeric
1 tsp brown sugar
1 tbsp finely chopped garlic
1 tbsp peeled and finely chopped fresh ginger
1 tsp chili flakes
pinch of salt
Directions:
Soak the desiccated coconut in warm water for about 30 minutes then drain and squeeze out excess water. While the coconut is soaking, rub the chicken drumsticks with the lime juice and some salt and set in the refrigerator for 20 minutes.
To make the spice rub, grind the toasted spices to a powder in a mortar or food processor. In a small bowl, combine the toasted and ground spices, turmeric, sugar, garlic, ginger, chili flakes, salt and drained desiccated coconut.
Rub the spice rub onto the drumsticks and set aside to marinate for 30 minutes.
Prepare the grill for low heat. Just before grilling, oil the hot grate. Place the chicken on the grate above the drip pan. Cook for 20 - 30 minutes. Regularly baste the chicken with a little oil. When the drumsticks are almost done move to higher heat and grill until skin becomes crisp and chicken is done. Test by pricking the chicken to the bone and make sure the juices run clear.
