How to Make Japanese Salmon Fillet with Miso Asian Cooking Recipe Cuisine

Japan Salmon Fillet with Miso


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

4 salmon fillets, each about 6-7 oz. 

MARINADE:

1 tbsp white miso

1 tsp red miso

1 tbsp soy sauce

1 tbsp mirin

1 tbsp sugar

1 tbsp finely chopped chives

1 tsp pink peppercorns

DIPPING SAUCE:

1 tsp peeled and chopped fresh ginger, crushed to a paste

1/2 cup soy sauce

2 tbsp mirin

2 tbsp sake

1 tsp yuzu or lemon juice

1 tsp sesame oil

finely grated zest of 1/2 lime

Directions:


In a small bowl combine the ingredients for the marinade. Place fish fillets in a shallow tray. Pour the marinade over and turn the fish to evenly coat. Let marinate in the refrigerator for about 1 hour.

In a small bowl, combine the ingredients for the dipping sauce.

Prepare the grill at about medium heat. Just before grilling,  oil the hot grate. Place the fillets on the grate over the medium heat zone and grill each side for 3-5 minutes whilst basting with the leftover marinade.Check for doneness by inserting a needle. Fish is done when the needle is warm when holding on the back of the hand.
