Philippines Egg and Tomato Salad
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4-5 Servings
5 hard-boiled eggs
2 medium-sized salad tomatoes, dices
salt to taste
lettuce leaves
Directions:
Peels eggs and dice in small pieces. Season with salt to taste. Season diced tomatoes with salt to taste.
Gently combine the hard-boiled eggs and tomatoes. Let stand for 20 minutes in the refrigerator. Serve on lettuce leaves.
*If you have it, use the traditional salted eggs in place of 2 or 3 of the eggs and remove the salt. It lessens the amount of moisture that goes out of the tomatoes.
