Vietnam Hanoi Cha Ca (Fried Fish with Dill)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings


2/3 cup rice flour

1 1/2 tsp ground turmeric

1 1/4 lb white fish fillets cut into chunks

vegetable oil for deep frying

1 large bunch fresh dill

1 tbsp peanut oil

2 tsp roasted peanuts

4 spring onions, cut into bite size pieces

1 small bunch fresh basil, leaves chopped

1 small bunch fresh cilantro, stalks removed

cooked rice


1 lime, cut into wedges




Directions:


Mix flour with the turmeric and toss the chunk of fish in until well-coated. Heat the oil in a wok or large heavy pan and cook the fish in batches until crisp and golden. Remove the fish and drain on paper.

Scatter some of the dill fronds on a serving dish, arrange fish on top and keep warm. Chop some of the remaining dill fronds and set aside for garnish.

Heat peanut oil in a small wok or frying pan. Stir in peanuts and cook for 1 minutes then add spring onions, the remaining dill fronds, basil and coriander.  Stir-fry for no more than 30 seconds and spoon the herbs and peanuts over the fish. Garnish with chopped fill and serve with lime wedges and rice.
