Vietnam Eel Braised in Caramel Sauce


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.




Recipe makes for 4 Servings

3 tbsp brown or raw cane sugar

2 tbsp soy sauce

3 tbsp fish sauce

2 garlic cloves, crushed

2 dried chilies

2-3 star anise

4-5 black peppercorns

12 oz eel on the bone, skinned, cut into 1-inch chunks

7 oz butternut squash, cut into bitesize chunks

4 spring onions, cut into bitesize pieces

2 tbsp sesame or vegetable oil

2 in fresh root ginger, peeled and cut into matchsticks

salt

rice or noodles


Directions:


Put sugar in a wok with 2 tbsp water and gently heat until it turns golden. Remove the pan from the heat and stir in the soy sauce and fish sauce with 1/2 cup water. Add the garlic, chilies, star anise and peppercorns and return to heat. 

Add the eel, squash and spring onions, making sure the fish is well-coated in sauce and season with salt. Reduce the heat, cover the pan and simmer gently for about 20 minutes, until the eel and vegetables are tender.

Meanwhile, heat a small wok, pour in the oil and stir-fry the ginger until crisp and golden. Remove and drain on kitchen paper.


Serve with rice and noodles with the crispy ginger on top.
