China Scrambled Eggs with Shrimp


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings


5 eggs

4 oz shelled and cooked shrimps

2 spring onions

1 sprig parsley

2 tbsp oil

1/2 tsp salt

1/4 tsp sugar

3 tbsp oil

1 tsp sesame oil

1/2 tsp cornstarch

ground black pepper

3 tomatoes


Directions:


Beat eggs in a mixing bowl and add salt, sugar, oil, sesame oil and a pinch of pepper gently.

Dredge shrimp in cornstarch with a bit of pepper and coat evenly.

Dice spring onions. Wash and trim parsley. Put all ingredients expect the parsley into the egg batter and mix thoroughly.

Heat the pan with the oil and swirl ir so the base is completely covered. Pour in the beaten eggs and scramble quickly over low heat. Dish and sprinkle with parsley.


Clean and slice tomatoes to border platter. Serve hot.
