Cambodia Grilled Eel Wrapped in Bacon


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

2 lemon grass stalks, trimmed and chopped

1 oz fresh ginger, peeled and chopped

2 shallots, chopped

1 tbsp palm sugar

1 tbsp vegetable and peanut oil

2 tbsp fish sauce

2 1/2 lb. fresh eel, skinned and cut into 1-inch pieces

12 slices fatty bacon

freshly ground black pepper

a small bunch of fresh cilantro leaves


Directions:


Using a mortar and pestle pound the lemongrass, ginger, garlic and shallot with the sugar to form a paste Add the oil, fish sauce, mix well and season with black pepper. Put the eel pieces in a dish and smear them thoroughly in this paste. Cover and place in the refrigerator for 2-3 hours to marinate.

Wrap each piece of marinated eel in a strip of bacon, gathering up as much of the marinade as possible.


To cook the eel parcels, you can use a conventional grill, a well-oiled griddle pan or a barbecue. If grilling over charcoal, skewer the eel parcels first. Cook the eel parcels until nice and crispy, roughly 2-3 minutes on each side. Serve with cilantro.
